Spinach Oatmeal Soup

Dark compost over the garden, I am beginning to dream about fresh greens.  I am hoping for loads of spinach.  Unable to wait I made this soup today:

Spinach Oatmeal Soup

Melt some butter in a soup pot.  A couple tablespoons, maybe.  Cut up an onion or two or three and cook it on low until it gets a little brown and transparent, stirring between doing the dishes and putting them away.  Add a little more butter.  Everybody loves butter.

Toss in a handful or two of oatmeal.  Use whatever you have-- Irish, rolled oats, quick,  anything that isn't instant and flavored like peaches and cream.    Cook this with the onions and butter until it is also brown and a little sticky looking.  Add a liter or so of broth (I used chicken) and let it simmer a bit. 

If you have a potato cut it up and put it in.  Soup loves a good potato.  Wash a  pound of spinach and take off any bits you wouldn't want to eat.  Add it to the pot and cover.  Cook until everything seems done: the potato is soft, the spinach is wilted.  Puree. 

Season with salt and pepper.  Or cloves if you're like that.  If you want a creamier soup add milk or sour cream.  If you add dairy heat it slowly.  Or serve the soup with a dollop of sour cream or yogurt or a splash of heavy cream.

Today I am having it without any dairy but when I heat it tomorrow I will add some.
